Nihari Curry Recipe

Ingredients

  1. ) Beef / Mutton - 1 KG (4-6 large pieces)
  2. ) Bones - 1 and a half KG (Knuckles and Marrow)
  3. ) Cooking oil / ghee - 250 grams
  4. ) Wheat Flour - 100-150 grams
  5. ) Onion - 1 medium sized (sliced)
  6. ) Sundip Ginger Garlic Paste - 1 teaspoon
  7. ) Sundip Nihari Masala - 1 Packet (use less for mild hot)
  8. ) Fresh lime - 2 pieces
 

Cooking method

  1. ) In a large cooking pot heat one cup of cooking oil / ghee, add sundip ginger garlic paste and stir for a while
  2. ) Add meat, bones, Sundip nihari masala and fry for a few minutes.
  3. ) Add 8-10 glasses of water
  4. ) Cover the pot and cook on low flame until the meat is tender. For beef about 5-7 hours and for mutton 3-5 hours will be required
  5. ) Dissolve the wheat flour in 1 to 2 cups of water and add this gradually to the gravy according to your choice. Continue stirring during the addition, cook further till the gravy gets thick enough.
  6. ) Heat the remaining cooking oil / ghee, add the sliced onions and fry till golden brown.
  7. ) Add the fried onions in to the gravy and let simmer for half an hour on low flame
 

Serving suggestions

  1. ) Garnish with chopped green chillies, sliced ginger and lime wedges.
  2. ) Serve hot with Menu Tandoori Naan or Menu Tandoori Roti
